Smashed Avo and Feta on Wholegrain Toast

Serves 1

Ingredients
2 slices of wholegrain sourdough
1 medium avocado, smashed
Squeeze of lemon juice, extra lemon wedge to serve
Salt and pepper to taste
30g crumbled feta
20g rocket, basil and watercress
2 tsp almond and cashew dukkah
Caramelised balsamic vinegar, to drizzle

Method:

  1. Toast sourdough.
  2. Meanwhile mix avocado with lemon juice, salt and pepper.
  3. Place smashed avocado onto sourdough.
  4. Crumble feta over the avocado.
  5. Top feta with greens and dukkah.
  6. Squeeze lemon juice over the top and drizzle caramelised balsamic vinegar.
